Grading specialty coffee

Specialty coffee like the name special is the term used for the highest grade of  coffee available, specialty can only occur when all of those involved in the coffee value chain work in accord and maintain a keen focal point on standards and excellence from start to finish.

Coffee beans are usually graded out of 100. This grading process is called “cupping”. And according to the Specialty Coffee Association (SCA), specialty coffee is Arabica coffee with a cup score of 80+ points.

The coffee must have been brewed with a certified Q sorter. Also, many faults in a sample of unroasted green coffee beans will automatically exclude this coffee from the specialty case.
